SWEET POTATO QUINOA SALAD

INGREDIENTS

  • 1 sweet potato
  • 1/2 cup dry quinoa
  • 4-5 cups arugula or greens of choice
  • 1/3 cup yellow mustard
  • 2 tbsp maple syrup
  • 2 tbsp nutritional yeast optional

INSTRUCTIONS

  1. Pre-heat your oven to 375 degrees Fahrenheit. Line a baking sheet with parchment or a reusable silicone mat.
  2. Peel and cube sweet potato. Place on the baking sheet. Bake for 40 minutes, turning halfway.
  3. In the meantime, cook the quinoa according to the package instructions.
