Can we talk about my new favorite cookbook?! I recently received Pure Delicious by Heather Christo in the mail. It far exceeded my expectations.

Is Heather Christo on your radar yet? If not then she certainly should be! I’ve known Heather personally for quite a few years now and I’ve watched her career soar. She’s a hard worker and mom to two kiddos, one of which inspired her on this foodie journey.

Don’t dismiss this book if you have no allergies in your house. These recipes stand up strong for anyone, anywhere. With easy to find, budget-friendly ingredients there’s something for all in this cookbook.

Heather walks you through the issues that her family faced when allergies became an issue. In an easy, friendly manner she goes through ingredients and substitutions. You will swap new ingredients for old…and you will not feel like you are missing out on flavors and relatable textures.

When I flipped through the pages many recipes stood out, but page 78 had me swooning. I needed to make something delicious for my kids for dinner and I knew they would LOVE this Spicy Thai Red

Curry Noodle Soup. This soup takes 17 minutes to prepare and tastes better than your local Thai restaurant! Heather says this is the most-viewed and most-cooked recipe on her site over the last nine years. It was a total win over here! I’ve made it twice in the past week. I suggest you have a spoon and fork ready and don’t be shy to slurp straight out of the bowl!

Recipe: Spicy Thai Red Curry Noodle Soup

This soup takes 17 minutes to prepare and tastes better than your local Thai restaurant!

Prep: 5 mins
Cook: 10 mins
Yields: 4-6 Servings

Ingredients

8 ounces rice stick noodles
3 garlic cloves, minced
2 tablespoons minced fresh ginger
2 tablespoons red curry paste
2 tablespoons coconut oil
4 cups veggie or chicken broth
2 cans unsweetened coconut milk
chopped fresh cilantro or basil for garnish
sliced red Fresno chiles, jalapeño and green onion for garnish
mung bean sprouts or matchstick carrots for garnish


Directions

1 Bring a large pot of water to boil. Add the rice noodles, cook for 3 minutes and drain in cold water.
2 Combine the garlic, ginger and curry paste in a small food processor or mince and mash them together. Add the coconut oil & combine well.
3 In a large pot hear the curry paste mash over medium heat for 1-2 minutes.
4 Add the broth and deglaze the pot. Add the coconut milk and bring the mixture to a boil. Season with salt if needed
5 Add the drained noodles and let them cook and soak up the hot broth for 2 minutes.
6 Divide the soup among serving bowls and serve garnished with cilantro, Thai basil chiles and green onions if desired.
